Other than that, you could try tenderizing it before hand. Or you might not be cooking it long enough. In order for the meat to be tender the muscle proteins need to be broken down in some way. Long slow cooking is one way to do that, but that method is usually applied to roasts containing more fat, like prime rib. I love them in...I have such issues with crock pots. I love them in theory but in practice I've yet to find recipes for them that I truly love. Doesn't seem to matter what kind of food or type of meat, it always ends up fairly bland and overdone overall.
